Pasote Blanco is one of the additive-free, traditionally made tequilas we are proud to pour at Camp West, the 21+ cabin-inspired cocktail bar and restaurant in the West Seattle Junction. Crafted by celebrated distiller Felipe Camarena at his El Pandillo distillery in the Jalisco Highlands, this unaged blanco is all about clean, vivid agave character. It is a favorite for guests who want to taste tequila in its purest form, or for a bartender building a bright, agave-forward cocktail.
About the Producer
Pasote is made by Felipe Camarena, a third-generation tequilero widely respected for his craft and ingenuity. He produces Pasote at El Pandillo (NOM 1579), a distillery he is known for outfitting with his own inventive equipment. Pasote is recognized on the additive-free verified lists maintained by the agave community, meaning the spirit is made without sweeteners, coloring, or other additives, letting the agave speak for itself.
Agave & Region
Pasote Blanco is a 100% blue agave (Agave tequilana) tequila from Los Altos, the Jalisco Highlands of Mexico. The agave is cooked in traditional brick ovens, crushed with a mechanical tahona, fermented in stainless steel, and double-distilled in copper pot stills. The blanco is bottled unaged, so what you taste is the agave and the land, with no oak in the way.
Tasting Notes
Bright and lively, with cooked agave, citrus, and a clean minerality. There are gentle green and herbal notes, a touch of black pepper, and a crisp, refreshing finish. Because it is additive-free and unaged, the profile stays true to the agave from start to finish.
How to Enjoy It at Camp West
We pour Pasote Blanco at $12. Sip it neat at room temperature to appreciate the pure agave, or ask for it slightly chilled. It also shines in cocktails, bringing a crisp, agave-driven backbone to a margarita or a Paloma. Let your bartender know how you like it and we will set you up.
FAQ
What does “additive-free” mean? It means the tequila is made without added sweeteners, coloring, glycerin, or flavoring, so you taste only the agave and the distiller’s craft.
Is blanco the same as silver tequila? Yes. Blanco (also called silver or plata) is unaged tequila, bottled shortly after distillation for the brightest agave flavor.
