This is bourbon that has literally traveled the world, maturing aboard ships as it crosses oceans, ports, and the equator. For a cabin-inspired bar built around the outdoors and a good story, a whiskey that earns its character on the open water is an easy bottle to love.

About the Distillery

Jefferson’s is the creation of master blender Trey Zoeller, who dreamed up the Ocean project in 2008 while aboard a friend’s ship, wondering what would happen to a barrel of bourbon aged at sea. The first barrels set sail in 2012 aboard a research vessel, and the program has continued through many numbered voyages since. Each release is a small-batch experiment in what motion, salt air, and shifting temperatures can do to Kentucky bourbon.

Style & Mash Bill

This is a straight bourbon whiskey, bottled at 45% ABV. Beyond the standard barrel maturation, the defining step is the time spent at sea: the constant rocking keeps the bourbon in contact with the charred oak, while equatorial humidity and salty ocean air push it toward a denser, brinier, more caramelized profile than land-aged bourbon.

Tasting Notes

Expect a rich, sweet nose of caramel and toasted oak with a savory, briny edge. The palate is dense and full, layering dark caramel and vanilla against a touch of salt and spice, finishing long and warm. It is bourbon with a sense of place, even if that place is constantly moving.
