High West Double Rye is a workhorse on our back bar, and we mean that as the highest compliment. It is a blend of two straight rye whiskeys, built to deliver bold rye character at a friendly everyday price. For a cabin-inspired cocktail bar like Camp West in West Seattle, where the whiskey list runs deep, Double Rye is the bottle we reach for constantly, neat or in a cocktail.
About the Distillery
High West was founded in 2006 by David and Jane Perkins in Park City, Utah, the first legal distillery in the state since Prohibition. Perkins, a former biochemist, made his name as a blender, combining High West’s own distillate with carefully sourced whiskeys. Double Rye is one of the clearest expressions of that philosophy, pairing two very different ryes to create something more interesting than either one alone.
Style & Mash Bill
Double Rye blends two straight rye whiskeys of different ages and grain recipes. One is a high-rye whiskey of roughly 95 percent rye with malted barley, sourced from MGP in Indiana, prized for its bright, spicy, almost gin-like botanical edge. The other is High West’s own rye, made from about 80 percent rye and 20 percent malted rye, which brings a richer, rounder body. The result is bottled at 92 proof. Together the young and the older rye balance bite with depth.
Tasting Notes
The nose offers mint, clove, allspice, licorice root, and dark chocolate, with a signature whiff of gin-like botanicals. The palate brings a burst of rye spice that softens into menthol, eucalyptus, lemon, and ginger tea with a touch of honey. The finish lands on warm cinnamon and a final hint of anise.
How to Enjoy It at Camp West
Double Rye is a fantastic mixing rye, and it makes a crisp, spicy Manhattan or Old Fashioned. It also holds up neat or over a rock if you want to enjoy that botanical character on its own. Our pour is listed at $12, which makes it an easy yes.
