Del Maguey Chichicapa Mezcal

Some bottles helped write the modern mezcal story, and Del Maguey Chichicapa is one of them. We pour it at Camp West in West Seattle because it is a benchmark: a Single Village mezcal that shows exactly why this category captured the imagination of bartenders and drinkers around the world. Complex, layered, and beautifully smoky, Chichicapa is the kind of pour that turns a quiet evening into a memorable one.

About the Producer

Del Maguey is the pioneering brand that introduced “Single Village” mezcal to a wide audience, sourcing distinct bottlings from individual villages in Oaxaca and crediting the maestro mezcalero behind each one. Chichicapa is made in the village of San Baltazar Chichicapam by maestro Faustino García Vásquez, using methods passed down through generations. Del Maguey’s village-by-village approach helped define how the world thinks about artisanal mezcal.

Agave & Region

Chichicapa is made from 100 percent Espadín agave in San Baltazar Chichicapam, Oaxaca, and bottled at 48 percent ABV. The agave is roasted in an in-ground earthen pit, crushed, fermented in wooden vats, and double distilled in copper pot stills, the traditional artisanal method. An extra-long roast is part of what gives Chichicapa its signature caramelized, layered character. This is mezcal that tastes deeply of its village.

Tasting Notes

Chichicapa is rich and complex. The nose offers baked pineapple, a touch of leather, and gentle smoke. On the palate, roasted agave mingles with toasted nuts, citrus zest, sweet tobacco, and warming smoke, with herbal and mineral notes weaving through. The finish is long and lingering, leaving roasted, fruity, and nutty flavors behind. It is smoky, yes, but elegant and full of depth rather than blunt.

How to Enjoy It at Camp West

This is a sipping mezcal through and through. Enjoy it neat in a copita, in small sips, letting the layers unfold as it warms. Traditionally mezcal is sipped, never shot. It can also bring serious depth to a smoky cocktail, but we encourage you to try it on its own first. Our pour is $19. Order it, slow down, and savor it.
