Forbidden Fir

The Forbidden Fir is for the guest who likes a cocktail with a little mystery to it — herbal, aromatic, and elegantly dry. It is one of the more sophisticated sips at Camp West, our cabin-themed craft cocktail bar in the West Seattle Junction, built around rosemary-infused gin and a whisper of Italian citrus. If a martini went for a walk through an evergreen forest, this would be the result.

What’s In It

  • Rosemary-infused gin — house-infused so the gin’s botanicals meet a piney, woodsy rosemary note.
  • Italicus — a delicate Italian rosolio built on Calabrian bergamot and Sicilian citron, with soft floral notes of chamomile, lavender, and rose and a gentle rooty bitterness.
  • Dry vermouth — crisp, herbal, and lightly bitter, it ties the drink together and keeps it on the dry, savory side.

How It Tastes

Aromatic and beautifully dry, with layered herbal and floral notes. The rosemary gin leads with a fresh, piney lift, Italicus brings bright bergamot citrus and a silky floral sweetness, and the dry vermouth grounds everything with a clean, savory finish. It is spirit-forward but not heavy — sophisticated, fragrant, and refreshing all at once.

The Story Behind the Name

Every forest has that one towering fir you are not quite supposed to climb. The Forbidden Fir is our playful tip of the hat to it — a little wild, a little elegant, and impossible to resist once you have had a taste.

What to Pair It With

This herbal, citrus-kissed cocktail pairs beautifully with savory plates. Try it alongside our Delmonico Steak Bites, the Italian Herb Chicken Fillets, or the Mushroom Cassoulet. See everything on our dine-in menu.
