Stregasaurus Rex

The Stregasaurus Rex is a beast of a cocktail, in the best possible way. Herbal, complex, and built for the curious drinker, it is the boldest of the signature cocktails at Camp West, our 21+ cabin-inspired craft cocktail bar in the West Seattle Junction. This is a spirit-forward, amaro-driven sipper for people who love big, layered, grown-up flavors. If you have worked your way through the easy crowd-pleasers and want something with real teeth, this is the West Seattle pour for you.

What’s In It

This cocktail is an all-star team of Italian botanical spirits: Lillet Blanc, Strega liqueur, Fernet Branca, and lime. Lillet Blanc is a French aperitif wine blending Bordeaux whites with citrus liqueurs, offering honeyed orange, floral, and gently bitter notes. Strega is a vibrant yellow Italian herbal liqueur made with around seventy botanicals including saffron, mint, fennel, and juniper, sweetly minty and richly spiced. Fernet Branca is an intensely bitter Italian amaro famous for its powerful menthol, eucalyptus, and herbal-bitter punch. Fresh lime ties these big flavors together with bracing acidity.

How It Tastes

Complex, herbal, and bittersweet with a cooling menthol finish. Lillet Blanc opens soft and honeyed with floral citrus, Strega layers in minty, saffron-spiced sweetness, and Fernet Branca crashes in with its bold, menthol-bitter depth. Lime keeps it lifted and bright so the whole thing stays balanced rather than heavy. It is bracing, aromatic, and seriously sophisticated, a digestif-style cocktail that rewards slow, attentive sipping.

The Story Behind the Name

Strega plus a little prehistoric swagger equals Stregasaurus Rex, the apex predator of the cocktail menu. It is the biggest, boldest creature in the lineup, built for the adventurous drinker who wants to roam the wilder side of the bar. Around the Camp West fire, this is the one you order when you are ready to go big and embrace the untamed end of the flavor spectrum.

What to Pair It With

Bitter, herbal, and bold, it wants rich, savory plates. The Delmonico Steak Bites are a powerhouse match, while the Mushroom Cassoulet brings earthy depth that meets the amaro head-on. To finish, the cocktail’s digestif character pairs wonderfully with our S’mores dessert. See the full dine-in menu for more ideas.
