Suntory Whisky Toki

Suntory Whisky Toki brings a bright, easygoing taste of Japan to the shelf at Camp West, our cabin-inspired cocktail bar and restaurant in the West Seattle Junction. Light, crisp, and endlessly versatile, Toki is the bottle we hand to guests who want to explore Japanese whisky without commitment, and it makes a wonderful highball on a warm Seattle evening.

About the Distillery

Toki is a product of the House of Suntory, the pioneer of Japanese whisky, whose roots reach back to the founding of the Yamazaki distillery in 1923. Toki draws on Suntory’s three landmark distilleries: Hakushu, set in the forested foothills of the Japanese Alps; Yamazaki, Japan’s oldest malt distillery; and Chita, known for its refined grain whisky. First released to the U.S. market in 2016, the name “Toki” means “time” in Japanese, a nod to the brand’s blend of heritage and modern style.

Style & Mash Bill

Toki is a blended Japanese whisky, marrying single malts from Hakushu and Yamazaki with single grain whisky from Chita. Hakushu malt forms the backbone, Chita grain lends a soft, clean character, and Yamazaki malt adds depth. It is bottled at 43% ABV (86 proof).

Tasting Notes

The nose is fresh and inviting, with green apple, basil, and honey. The palate is bright and citrus-forward, showing grapefruit and green grape alongside peppermint and a subtle herbal thyme note. The finish is gently sweet and lightly spiced, with vanilla, white pepper, and a touch of ginger. The overall impression is crisp, clean, and refreshing.

How to Enjoy It at Camp West

Toki was practically made for the Japanese highball: poured over plenty of ice and topped with cold soda water, it is light, crisp, and the perfect aperitif. We are glad to build you one. It also sips nicely neat or over a single rock if you want to focus on its delicate citrus and honey notes. A pour is $12.
