Redwood Empire Pipe Dream Bourbon is a California craft bourbon that earned its place on the shelf at Camp West, our cabin-inspired cocktail bar and restaurant in the West Seattle Junction. Distilled and blended by Redwood Empire Whiskey in Graton, in California’s Sonoma County, Pipe Dream takes its name from the Pipe Dream redwood, one of the tallest trees on the planet, standing in the Patriarch Forest of Humboldt Redwoods State Park. It is the kind of bottle we love: outdoorsy at heart, well-made, and easy to pour for both the curious newcomer and the seasoned bourbon drinker.
About the Distillery
Redwood Empire Whiskey is made in Graton, California, and the brand is built around a simple promise to the landscape it is named for: for every bottle sold, Redwood Empire plants a tree. That conservation streak is a big part of why Pipe Dream feels at home next to the rest of our list. It is whiskey with a sense of place and a sense of responsibility, which suits a bar named after the woods.
Style & Mash Bill
Pipe Dream is a blended straight bourbon, drawing together both Redwood Empire’s own distillate and select straight bourbons sourced from Kentucky, Tennessee, and Indiana, with barrels aged roughly four to twelve years. It leans on a corn-forward mash bill rounded out with rye and malted barley, and the standard bottling lands at 90 proof. The result is approachable without being thin.
Tasting Notes
Expect a warm, corn-sweet core with notes of vanilla, caramel, and baking spice, a touch of rye spice on the edges, and a smooth, lightly oaked finish. It is a friendly, sip-forward bourbon that rewards a slow pour by the fire.
How to Enjoy It at Camp West
We pour Pipe Dream at $11. Neat is the purist’s move and lets the vanilla and caramel shine; over a single large rock, it opens up and softens for easy sipping. It also makes a clean, balanced Old Fashioned if you would rather have it stirred. Ask your bartender which way they would pour it tonight.
