Koloa Chocolate Rum brings a little island warmth to the back bar at Camp West in West Seattle. Made by Koloa Rum Company on the island of Kauaʻi, this is a Hawaiian rum layered with real cacao flavor, smooth enough to sip and rich enough to turn a simple cocktail into dessert. It fits our cabin-inspired room perfectly: easygoing, a touch indulgent, and made by people who care about where their ingredients come from.
About the Producer
Koloa Rum Company distills, blends, and bottles all of its rum at its distillery in Kalāheo on Kauaʻi, Hawaii. The rums are made from sugar and distilled in single batches using a vintage copper pot still, cut with water sourced from the slopes of Mount Waiʻaleʻale. Koloa’s chocolate expression, officially the Kōloa Kauaʻi Cacao Rum, is made in partnership with Kauaʻi’s Lydgate Farms and incorporates Hawaiian-grown cacao, keeping the flavor rooted in the island.
Style & Flavor
This is a flavored Hawaiian rum, built on Koloa’s smooth sugarcane spirit and finished with cacao. The result is dark and dessert-leaning without being syrupy, balancing chocolate richness against the clean, slightly tropical character of the base rum.
Tasting Notes
Look for aromas of cocoa, vanilla, and a hint of toasted sugar. On the palate, smooth chocolate meets the warmth of rum, with notes of caramel and a gentle sweetness. The finish is rounded and mellow, with lingering cacao.
How to Enjoy It at Camp West
Our Koloa Chocolate Rum pour is $11. It is lovely neat or over a single large cube as a relaxed after-dinner sip. We also like it stirred into a chocolatey riff on a White Russian, splashed into coffee, or built into a dessert-style cocktail. Tell your bartender how sweet you like things and we will dial it in.
