Green Chartreuse

Green Chartreuse is one of the most legendary and sought-after liqueurs in the world, and we are proud to pour it at Camp West, our cabin-inspired cocktail bar and restaurant in the West Seattle Junction. Made by Carthusian monks in France from a centuries-old secret recipe of 130 herbs and botanicals, it is vivid green, intensely herbal, and unmistakably itself. Because production is deliberately limited and global demand is high, Green Chartreuse has become genuinely scarce, which makes finding it on a back bar in West Seattle a small treat for any cocktail lover.

About the Producer

Chartreuse has been produced by the Carthusian monks since 1737, based on a manuscript of herbal knowledge that dates back centuries earlier. Only a tiny number of monks know the full recipe. In recent years the order chose to cap production to focus on their monastic life of solitude and prayer, rather than expand to meet demand, which is why bottles have become harder to find worldwide.

Style & Flavor

Green Chartreuse is a high-proof herbal liqueur, bottled at roughly 55% ABV, built from 130 plants, herbs, and botanicals. The style is powerfully aromatic, complex, and only moderately sweet, balanced by a wave of herbal intensity. It is naturally green, with the color coming from the botanicals themselves.

Tasting Notes

Expect a soaring aroma of mint, green herbs, and spice. The palate is layered and lively, with notes of pine, anise, fresh herbs, citrus peel, and a warming peppery heat from the high proof. The finish is long, complex, and cooling.

How to Enjoy It at Camp West

A pour of Green Chartreuse is $35 at Camp West, reflecting its rarity and allocated supply. Savor it neat or over a single large ice cube to appreciate its full complexity, take it as a bold herbal shot, or order it in a classic cocktail such as a Last Word or a Chartreuse Swizzle. Ask our bartenders for their favorite way to serve it.
