Mezcal rewards the curious, and Bozal Ensemble is one of the most inviting ways to start exploring it. We pour this wild-agave blend at Camp West in West Seattle because it captures the soul of artisanal Oaxacan mezcal without demanding that you already speak its language. Layered, gently smoky, and quietly complex, it is the bottle we reach for when someone says, “I have never really had mezcal.” It is a journey in a glass, and a great first stop.
About the Producer
Bozal is a family-produced mezcal whose name translates roughly to “wild” or “untamed,” a nod to the indigenous agave species that grow in the hard-to-reach, uncultivated hills of southern Mexico. The mezcals are made by maestros mezcaleros working in a centuries-old tradition, many of them carrying knowledge passed down through several generations of their families. Bozal celebrates that heritage by bottling small-batch expressions that taste of their place.
Agave & Region
Ensemble (sometimes spelled Ensamble) is a blend of agave varietals from Oaxaca. It brings together wild-grown Mexicano and Barril agave with cultivated Espadín, the three coming together for a mezcal that is lighter and more approachable than a single wild-agave bottling. The agave hearts are roasted in earthen pit ovens, crushed by a stone tahona wheel, fermented in open air with naturally occurring yeast, and double distilled, the time-honored method behind traditional mezcal.
Tasting Notes
Bozal Ensemble opens soft and easygoing, then develops complexity as you sip. Expect gentle wood smoke wrapped around earthy minerality, a touch of sweetness, and savory, herbal depth from the wild agave. The finish is long and warming. It is smoky, yes, but balanced, never harsh, the kind of mezcal that keeps revealing new notes the longer you spend with it.
How to Enjoy It at Camp West
Mezcal is made for slow sipping, so we serve Bozal Ensemble neat at room temperature, ideally in a small copita. Take it in small sips and let it open up. It also adds smoky depth to a mezcal Negroni or a smoky margarita if you would rather have it in a cocktail. Our pour is $13. Pair it with something from the kitchen and settle in.
FAQ
What does “Ensemble” mean on a mezcal? It means the mezcal is a blend of more than one agave variety, here wild Mexicano and Barril with cultivated Espadín, distilled together for added complexity.
Is Bozal Ensemble very smoky? It has a balanced, gentle smokiness rather than an overpowering one, which makes it a great introduction to mezcal.
