High West The Noble Share is one of the more special-occasion bottles we keep at Camp West in West Seattle. It is a limited, premium blended whiskey that came out of a collaboration between High West and Casa Noble Tequila, finished in tequila barrels for a genuinely unusual flavor. For a cabin bar that loves a good story behind a pour, The Noble Share is a conversation piece as much as a whiskey.
About the Distillery
High West was founded in 2006 by David and Jane Perkins in Park City, Utah, the state’s first legal distillery since Prohibition. The brand is renowned for creative blending and barrel finishing, and The Noble Share is a showcase of that adventurous spirit, pairing High West’s rye whiskey craft with the agave heritage of Casa Noble.
Style & Mash Bill
The Noble Share is a blend of straight rye whiskeys finished in tequila barrels. The base is built on High West’s familiar high-rye recipes, including an MGP rye of about 95 percent rye and High West’s own rye of roughly 80 percent rye with malted rye, then finished for several months in Casa Noble extra añejo tequila barrels, with a portion seeing additional cask treatment. Because it is a limited release, exact proof and barrel details can vary by batch; recent releases have landed around 104 proof.
Tasting Notes
The tequila finish makes this one distinctive. Look for cooked agave on the nose alongside lemongrass, vanilla, and cinnamon. The palate brings the botanical spice of the rye woven together with sweet agave and a warm cinnamon-stick character from the barrels. It is elegant, layered, and unlike most ryes you will taste.
How to Enjoy It at Camp West
This is a sipping whiskey, full stop. We recommend it neat so the agave-and-rye interplay comes through, or with a single rock if you like it just slightly opened up. Our pour is listed at $41, reflecting its limited, premium nature.
