Pasote Reposado sits right in the sweet spot of the Pasote family on our agave list at Camp West, the 21+ cabin-inspired cocktail bar and restaurant in the West Seattle Junction. Rested in oak for a stretch but not too long, this reposado from distiller Felipe Camarena keeps the bright agave of the blanco while picking up a gentle layer of barrel warmth. It is a versatile, crowd-pleasing pour, equally at home neat or in a cocktail.
About the Producer
Pasote is made by Felipe Camarena, a third-generation tequilero respected throughout the agave world for his craft and inventive distilling. He produces Pasote at his El Pandillo distillery (NOM 1579) in the Jalisco Highlands. The reposado, like the rest of the line, is recognized as additive-free, so no sweeteners, coloring, or flavoring get between you and the spirit.
Agave & Region
This is a 100% blue agave (Agave tequilana) tequila from Los Altos, the Jalisco Highlands of Mexico. The agave is cooked in brick ovens, crushed with a tahona, fermented, and double-distilled in copper pot stills, then rested in barrels (reposado means “rested,” a stage between unaged blanco and longer-aged añejo). The result is balanced between fresh agave and soft oak.
Tasting Notes
Cooked agave and citrus from the blanco carry through, now wrapped in light vanilla, gentle oak, and a touch of caramel. There is a soft pepperiness and a clean, medium finish. It is smooth without losing the crisp, additive-free agave character Pasote is known for.
How to Enjoy It at Camp West
We pour Pasote Reposado at $15. It is lovely neat or over a large cube, and it is our pick for guests who want a little more depth than a blanco without going all the way to añejo. It also makes a beautifully balanced margarita or Paloma. Tell your bartender how you like it.
FAQ
What does “reposado” mean? Reposado means “rested” in Spanish. It is tequila aged in oak for between two months and one year, sitting between blanco and añejo in color and smoothness.
Is reposado good in a margarita? Yes. Its light oak adds depth and roundness to a margarita while keeping the agave front and center.
