Wines of Substance Sauvignon Blanc

The Wines of Substance Sauvignon Blanc is a crisp, no-nonsense Washington white that earns its spot on our list here in West Seattle. It comes from Substance, the value-driven label created by acclaimed Washington winemaker Charles Smith, known for its clever periodic-table labels (Sauvignon Blanc wears the “Sb” symbol). Bright, refreshing, and honestly priced, it’s a great everyday pour and a perfect match for the easygoing mood at Camp West.

About the Winery

Substance is the brainchild of Charles Smith, one of Washington State’s most celebrated and recognizable winemakers. The Substance line was built on a single-minded idea: make genuinely good, characterful wine that’s accessible to everyone. The minimalist labels, marked with elemental symbols like “Sb” for Sauvignon Blanc, are a nod to Smith’s stripped-down, substance-over-flash philosophy.

Region & Grape

This is 100% Sauvignon Blanc from Washington’s Columbia Valley, a high-desert growing region where warm days and cool nights produce white wines with both ripeness and zip. The fruit is typically fermented in stainless steel to keep the wine clean, crisp, and focused on its bright, aromatic character.

Tasting Notes

Look for lifted aromas of grapefruit, fresh-cut grass, and lemongrass, with citrus and herbal notes carrying through to a crisp, focused palate. It’s zesty and refreshing with a long, clean finish, the kind of white that wakes up your appetite and keeps things lively.

What to Pair It With

Sauvignon Blanc’s bright acidity loves fresh, herb-forward, and lighter dishes. Pair it with our Chimichurri Burrata, the Peri Peri Cauliflower, or a Kale Caesar from the dine-in menu. The wine’s citrus and grassy notes cut right through and lift each bite.

How We Pour It at Camp West

We offer the Wines of Substance Sauvignon Blanc by the glass for $12 or by the bottle for $40, served chilled. It’s one of our favorite easygoing whites to start the evening.
